以桃花香米和金健香米为对象，研究夏季和秋季大米生产线上细菌和霉菌的分布特性，以确定稻米加工过程中的微生物控制关键点。结果表明，从原料稻谷到成品米的加工过程中，细菌和霉菌的数量逐渐减少，各采样点细菌总数高于霉菌总数。微生物种类和采样点对微生物数量影响达到极显著水平(α<0.0001)。大米品种对微生物数目达到显著影响，加工季节对微生物数量影响不大。
